How a traditional offset moves heat

How reverse-flow moves heat

A reverse-flow offset adds a solid steel baffle plate under the cooking grates and moves the smokestack back over the firebox. Now the heat is forced to travel underneath that plate all the way to the far end of the chamber, then reverse direction and flow back over the top of the food before exiting the stack near where it started. The baffle does two jobs at once: it acts as a heat sink that radiates warmth evenly up through the whole grate, and it routes the airflow so the far end is no longer starved of heat. Because a traditional layout has a natural hot end and a cool end, it lets you sear or grill hotter near the firebox while something holds gently at the far end — useful if you’re cooking different foods that want different heat, or if you want to grill directly over coals raked into the main chamber.
